Reheating Leftovers Safely in the UK

The FSA and Food Standards Scotland advise reheating leftovers only once and until they are steaming hot throughout.

The middle must be hot too

Microwave heating can be uneven. Stir or rotate where suitable and follow standing times and the original instructions.

Do not restart a storage clock

Reheating food does not create a fresh 48-hour storage window. Preserve the original cooling and storage history.

Rice needs extra care

Rice is handled under the stricter 24-hour refrigeration rule, ideally cooled within one hour of cooking.
